<summary type="text">Artículo - Acrylamide in starchy foods subjected to deep-frying, 20 years after its discovery (2002-2022): a patent review

On the occasion of the 20th anniversary of the discovery of acrylamide in food, an analysis of patents related to the mitigation of this compound in food products obtained through immersion frying was carried out. For this purpose, a comprehensive search, compilation, and information analysis were conducted using free online databases such as Google Patents, Patenscope, and Lens. The search yielded a total of 79 patents within the considered time period (2002-2022). The countries with the highest number of granted patents were the United States, the European Union, and South Korea. The patents were classified into four main approaches: raw material modification (49%), application of pre-treatments (27%), process modification (16%), and measurement techniques (8%). Among the results, Frito-Lay, an American company, stands out as the food industry company with the highest number of granted patents, totaling 15. Based on this review, it is concluded that while a significant number of patents have been granted in recent years, there is still a lag in developing countries. Furthermore, more studies are needed to determine acrylamide in starchy food matrices subjected to immersion frying different from potatoes

Las empresas de los diversos sectores económicos permanente postulan &#13;
objetivos, metas e indicadores en las diferentes áreas funcionales, los cuales &#13;
son alcanzados por medio del desarrollo idóneo de labores a nivel estratégico, &#13;
táctico y operativo, siendo estas ejecutadas por individuos influenciables por &#13;
factores internos y externos, tal es el caso de satisfacción laboral. La presente &#13;
investigación tiene como objetivo analizar la variable en mención en diferentes &#13;
individuos de 4 grupos sectoriales a saber: alimentos, tradicionales, logísticos y &#13;
emergentes. La metodología tuvo un enfoque cuantitativo, de tipo descriptivo y &#13;
de corte transversal, por medio de la aplicación del cuestionario S20/23, &#13;
instrumento de gran relevancia en el objeto de estudio, en tal sentido, la &#13;
muestra fueron 356 individuos ocupados. Los resultados más representativos &#13;
indican que los individuos pueden ser aglomerados en 3 clúster, analizados &#13;
desde dos aspectos: aspectos físicos o tangibles y los aspectos personales o &#13;
Intangibles. De allí que concluye que no hay una diferencia sustancial en el &#13;
nivel de los aspectos tangibles para los 3 clúster, pero si para los aspectos &#13;
intangibles, sugiriendo que el sector logístico se concentre en estrategias para &#13;
aspectos físicos, el sector emergente aspectos intangibles y los sectores de &#13;
alimentos y tradicional en una estrategia mixta

<summary type="text">Artículo - Competitive analysis for the  sustainability of tourism in Colombia

The purpose of this document is to provide the different stakeholders of &#13;
tourism in Colombia with an objective overview of the factors associated with &#13;
competitiveness and sustainability, enabling the establishment and analysis of &#13;
potential management scenarios, which must be managed correctly, to obtain &#13;
suitable positioning and profitability indicators in global markets. The researchers &#13;
analyzed 22 geographical areas, considering a quantitative descriptive, and &#13;
principal components analysis, through the use of the SPSS statistical tool. The &#13;
results allow identifying that the most representative variables are the cultural, &#13;
economic, marketing strategies, and infrastructure factors, therefore, they should &#13;
continue to be managed with public and private resources in the framework of &#13;
guaranteeing continuity and potential improvement. However, aspects inherent &#13;
to the environmental area, destination management, business management, &#13;
and social management should be the object of public policies with greater &#13;
efficacy, efficiency, and effectiveness, to mitigate the existing gaps with other &#13;
tourist destinations. Likewise, the work highlights the relevance of developing &#13;
comprehensive projects at the national level, which can generate effects on the &#13;
multiple variables associated with the competitiveness and sustainability of tourism &#13;
in Colombia because it represents one of the most important sectors for the national &#13;
economy due to its contribution in terms of wealth generation and social welfare.
